I love beets anytime of day! They're the perfect sweet little addition to a savory breakfast, if you ask me. Try out my beet brekkie hummus toast for yourself, & let me know what you think!
Ingredients
2 slices gluten free bread - I like the following local options: Canyon Bakehouse & Udi's, or if I'm feeling fancy, Havenly or Kim & Jake's!
Hummus - I like Cedar's
1-2 cloves chopped fresh garlic
1 small cooked sliced beet* - cook the night before in butter or olive oil until soft
rainbow microgreens
salt & pepper
olive oil drizzle
1 tsp sesame seeds
The Process
toast up your bread!
while your bread is toasting, chop up your garlic
once your bread is toasted to your liking, smear some hummus on that toast!
next, sprinkle the chopped garlic, salt & pepper onto the toast & hummus
add your sliced beets, & then top with the microgreens
top with some olive oil drizzle & sesame seeds

*Always feel free to switch up your veggie!! Sometimes I make this with zucchini, summer squash, radishes, or cucumber depending on what I have. Get creative!
