If you haven't tried Casa Alvarez' green chili, you're missing out! I've tried both the veggie & pork, & just can't get enough! Enjoy this Casa Alvarez Style Chicken Recipe for yourself.
I was first introduced to Casa Alvarez by one of their brand representatives in a Whole Foods Market. She gave me a taste & shared a wonderful recipe - chicken, plantains, & Casa Alvarez Chile Verde. I decided to put my own spin on it, & here's how it went:
Ingredients
1 package of Trader Joe's organic, boneless chicken thighs
3 organic plantains
Casa Alvarez Chile Verde con Veggie
Trader Joe's Chile Lime Seasoning Blend
3 cloves garlic
salt
pepper
3 tablespoons butter
olive oil
The Process
Marinate chicken 1 night before cooking:
trim fat from chicken thighs
season chicken (salt, pepper, Chile Lime Seasoning Blend)
crush & dice garlic
add 3 teaspoons olive oil
combine above ingredients in container & let sit overnight
Cook 24 hours after marinating:
slice & fry plantains in stove top skillet with butter + salt on medium heat (brown each side)
preheat oven to 350 degrees
lay out marinated chicken thighs on a baking sheet & top with fried plantains
once oven is preheated, bake for 20 minutes
take out chicken + plantains, top with Casa Alvarez Chile Verde con Veggie
bake everything again for 10 minutes
after 10 minutes, let your meal cool & serve!
