Here is yet another scrumptious recipe that my mom taught me - Chicken Crockpot Cassoulet! Have you ever tried a cassoulet? A cassoulet is a french stew containing meat & beans, & it's pretty delicious no matter which way you cook it! Below you can find my take on a cassoulet!
Ingredients
2 packs of chicken breasts (about 2 lbs.)
2 chopped leeks
1 cubed sweet potato
1 sliced yellow squash
2 chopped large carrots
1 bunch chopped asparagus
1 can black beans
1 can pinto beans
4+ cloves garlic - I like to just throw in big garlic chunks
2 cups chicken stock
(3x) 5.5oz. Campbell’s tomato juice cans
salt & pepper to taste
optional: 1-3 shallots (depending on size) - if you really like that biting onion flavor like we do in my house, then you'll enjoy the added scallions!
garnish with fresh thyme & tarragon
The Process
get all of your ingredients chopped up & sliced!
once you've got all of your veggies chopped up, begin to add your ingredients to the crokpot in the following order:
I like to add the chicken 1st
add in your veggies: leeks, sweet potato, carrots, squash, asparagus, garlic, shallots
add in your black & pinto beans (I buy "no salt added" & add the water to the crockpot as well)*
mix everything up, & salt/pepper to your liking
cook in crockpot for 6 hours - if you do not have the hour settings on your crockpot, cook on either medium or low for 6 hours
check about halfway (3 hour mark), & see if you're able to start shredding the chicken
be sure to shred your chicken before serving - I simply shred my chicken using 2 forks, it can get a little hot, just a heads up!
give everything another mix, & serve once the 6 hours is up!
don't forget to top your cassoulet bowls with fresh thyme & tarragon to lend some added flavor
