This yummy recipe, Tortellini con* Cannellini beans, was a classic in my house growing up. Simple to make for a family of four, my mom would whip this together many a night after a long day at work. I've brought back the recipe, & my husband is obsessed! It's become one of his favorite meals. Plus, it's a perfect meal to have with a glass of chilled white wine now that it's warming up for Spring time!
Ingredients
1 package of tortellini (about 8-10 oz.) - Taste Republic makes a great gluten free tortellini!
2 Italian chicken sausages (thinly slice)
1 cup chicken broth
3 chopped celery stalks
3/4 cup dry white wine
8oz. Cannellini beans (half a 16oz. can)
3 cloves minced garlic
1tsp garlic powder
1tsp onion powder
salt
pepper
optional: 1-3 thinly sliced shallots depending on size
optional: top with grated Parmesan & scallions!
The Process
thinly slice the sausage & fry it up in a pan on medium heat for about 10 minutes
add in the celery, garlic, beans, shallots, seasonings, & cook on medium low for 10-15 minutes
add in chicken broth & wine, let bubble & then turn down to a simmer
once simmering, add in tortellini & cook for about 1-3 minutes until the tortellini is soft
serve once the tortellini is ready & enjoy!
