This simple Pepper Pumpkin Chicken Chili crock pot dish is a must in the Fall or Winter when you're feeling lazy, but want something delicious! Tis' the season for pumpkin & chili!
Ingredients
2 lbs. chicken
2 large sweet potatoes
1 cup chicken broth
1 cup chicken stock
1 can black beans
2 cups coconut milk
1 can sweet corn
1 can pumpkin
1/2 a chopped yellow onion
1 Anaheim pepper
1 poblano pepper
1 orange bell pepper
3 giant cloves garlic
3 tbsp chili powder
2 tbsp cumin
2 tbsp paprika
1 tsp cayenne pepper
2 tsp clove
2 tsp nutmeg
4 tbsp sea salt - I usually add more, but I'm a salt addict!
2 tbsp fresh tarragon
1/2 tsp grated turmeric
optional: top with black cracked pepper & scallions
The Process
Start by adding the chicken, sweet potatoes, chicken broth & stock to your crock pot
Cook these 4 ingredients in the crock pot on high for 2 hours
After 2 hours, shred the chicken & add in the rest of your ingredients, mixing everything together
Once everything is added & well mixed, cook in the crock pot an additional 4-6 hours
Serve up & eat once it's ready!!
Don't forget your toppings - crushed tortilla chips & a dollop of sour cream are an excellent choice as well. Enjoy & stay warm out there!!
