Strawberry Moon Muffins

Inspired by the Full Strawberry Moon, also known as the Honey Moon, I decided to whip up these yummy Strawberry Moon Muffins. Many of these ingredients have a special meaning & bring a little bit of magic into this lunar recipe! Strawberries & Honey, of course, honor June's Honey/Strawberry Moon, but they are also a reminder of the sweetness of life, connecting us to pollinators & Spirit, especially the bees! The spices cinnamon & nutmeg both connect us to abundance & prosperity, stirring a wee bit of good fortune into the mix as well. Sea salt clears away negative energy this Full Moon, while citrus calls in the light of the Sun with his uplifting energy. Not to mention, these muffins are quite scrumptious!


Heads up - you will need a cupcake tin & baking cups.

Ingredients

  • 1 1/4 tsp baking powder

  • 1 carton (1 lb.) sliced strawberries

  • 1/2 tsp vanilla

  • 1 cup gluten free all-purpose baking flour

  • 1/2 cup blanched almond flour

  • 1/2 cup gluten free rolled oats

  • 1/2 cup oat milk, or milk of your choosing!

  • 3/4 cup honey - preferably local, sustainable honey!

  • 2 eggs

  • 1 tsp ground cinnamon

  • 1 tsp ground nutmeg

  • 1 tsp sea salt

  • 2 squeezed lemons

  • 1 tbsp lemon zest

  • 1/2 stick melted butter

  • optional: top w/ dandelion heads, hemp seeds, poppy seeds, or sugar crystals!



The Process

  • after slicing the strawberries, place them in a bowl & squeeze the 2 lemons worth of lemon juice over them - set aside

  • preheat your oven to 350 degrees Fahrenheit

  • mix dry ingredients: baking powder, all-purpose flour, blanched almond flour, rolled oats, cinnamon, nutmeg, sea salt

  • whip up wet ingredients: vanilla, oat milk, honey, eggs, melted butter

  • stir together the well-mixed dry ingredients & whipped smooth wet ingredients

  • once the wet & dry ingredients are fully blended together, add in the sliced strawberries with lemon juice

  • stir the strawberries & lemon juice into the batter until fully mixed

  • place your baking cups into your cupcake tin & pour the strawberry batter into the baking cups

  • optional: add on your toppings - dandelions, sugar crystals, poppy seeds, hemp seeds, etc.

  • place your cupcakes in the oven & bake at 350 degrees for 30 minutes

  • once your timer goes off, use a toothpick to make sure your cupcakes are fully cooked

  • let your cupcakes cool & enjoy!
