Once upon a Christmas, my mom & I whipped up these avocado sweet potato bites, & boy were they a hit! I could easily devour an entire platter, & the best part is that you can make them vegan or with bacon. Plus, they're super easy to make!
Ingredients
2 sweet potatoes - sliced
2 cloves garlic - minced
2 avocados - mashed
cilantro - chopped
Crunchsters Beyond Bacon Crunchy Mung Beans (or chopped bacon)
Trader Joe's Chili Lime seasoning
paprika
red pepper flakes
garlic powder
pepper
salt
optional: caramelized onions*
The Process
Preheat oven to 375 degrees
Wash your potatoes - I like to leave the skin on, but if you're not a fan of the skins then peel them right off
Next, cut your potatoes into slices - not too thin, about a quarter inch
Toss your sliced potatoes with olive oil, salt, pepper, & Trader Joe's Chili Lime seasoning
Place your potatoes on a baking sheet & set in the oven for 30-40 minutes, depending on how crispy you like your potatoes
While the potatoes are cooking, prepare the avocado topping: Mash together 2 ripe avocados, salt, pepper, paprika, garlic powder, red pepper flakes, lime, cilantro, garlic - save mixture in the fridge until potatoes are ready*
Once the 30 minutes is up, take your potatoes out of the oven, place them on a platter or tray & begin to top them with your avocado mixture
Once every potato is topped with avocado, top the avocado with your Crunchsters Beyond Bacon Crunchy Mung Beans (+ optional caramelized onions) or your cooked pork bacon bits

*Caramelize Onions: slice onions to caramelize, cook on high heat with salt, splash with water once they start to cook & slightly burn a little.
**If you're topping your sweet potatoes with bacon instead of Beyond Bacon Mung Beans then start cooking your bacon while the sweet potatoes are in the oven as well, so it is ready when the sweet potatoes are done. I would use 4-6 pieces of bacon depending on how much you love bacon!
