The Dip

Growing up, my family had a beloved dip that made its appearance at every gathering. We referred to this family delicacy as, The Dip, emphasis on the "the". A simple dip consisting of cream cheese, salsa & shredded cheese. Well, I've gone ahead & upleveled this dip, adding beef, beans & more veggies into the mix. It's still pretty damn easy, but booming with even more flavor than before! Try out the recipe for yourself:

The Dip, appetizer, cheese dip

Ingredients

  • 1 lb. ground beef

  • 8 oz. package cream cheese

  • 8 oz. block shredded cheese - I prefer a blend of 2 of the following: Colby Jack, Monteray, Cheddar, Oaxacan, Cotija

  • 15.5 oz. can spicy black beans

  • 1/2 chopped yellow onion

  • at least 6 cloves minced garlic

  • 10 tbsp salsa total - I like Cholula's Smoky Chipotle

  • seasonings:

    • 1.5 tbsp sea salt

    • 1 tbsp paprika

    • 1 tbsp garlic powder

    • 1 tbsp garlic powder

    • 1 tbsp coriander

    • 1/2 tbsp red pepper flakes

    • 1/2 tbsp chipotle powder

    • 1/2 tbsp chili powder

    • 1/2 tbsp cumin


The Process

  • preheat oven to 350 degrees Fahrenheit

  • saute onion & garlic on medium heat until they are lightly browned - about 7 minutes

  • add in black beans, stir, & let cook for 3 minutes

  • stir in ground beef & cook until the beef is browned

  • add in seasonings

  • cook mixture 5-10 more minutes on low

  • while the beef, seasonings, veggies, & beans are cooking, smear the cream cheese into either a glass or ceramic pan (Pan Size: 10x10 in. square, or pie/tart dish)

  • once you've covered the bottom of the pan with cream cheese, spread 5 tbsp salsa on top of the cream cheese

  • once the beef is fully cooked, add half of the beef/bean mixture on top of the cream cheese & salsa

  • sprinkle 5 more tbsp of salsa on top of the beef

  • add the remaining half of the beef mixture on top of that

  • dollop the remaining 5 tbsp of salsa onto the rest of the beef

  • top with shredded cheese

  • heat in the oven for 25-35 minutes, until the top is bubbling


Bring this to any party & it's sure to be eaten up, or make it for a lazy Sunday at home with loved ones!
