A few months back, I began volunteering with a wonderful non-profit, There With Care. There With Care supports families & children facing critical illness by doing everything from driving kids to soccer practice to gifting Christmas presents. It is a pretty spectacular organization, & I have been lucky enough to work on Team Chop, their meal prep sector. What exactly does Team Chop do? We create crockpot meals for families in need. The last time that I was able to volunteer with Team Chop, we made a little extra Chili Verde, which happened to be gluten-free, so I took it on home. I'd like to share this easy crockpot recipe here with you today - Chicken Green Chili Stew Recipe:
Ingredients
1 lb. boneless, skinless chicken breasts
10 oz. green chili
1 small onion
8 oz. hominy
2 medium potatoes
1 medium tomato
garlic powder
taco seasoning
cumin
salt
olive oil
corn tortilla strips
The Process
toss chicken breasts in a large bowl
chop onion, tomato, potato into cubes - add to chicken
mix in hominy + green chili
add seasonings to personal taste
combine ingredients in a crockpot
fill crockpot to the top with water
cook on high for 4-6 hours
let cool + serve!
use corn tortilla strips for dipping!
Please keep in mind, Team Chop does not strictly create gluten-free meals, but this one happened to be! We also prepare big batch meals, so I've adjusted the recipe here to feed about 4-6 people. Create yourself & enjoy at home!
